This warm, easy-to-make dish is a classic traditional recipe that is still popular in rural areas. The fibre and complex carbohydrates in sweet potatoes keeps you full for hours so this is a great recipe for whenever you know you’re going to be busy.
Ingredients
- 500 gms sweet potatoes, preferably the thin-skinned variety
- 2 limes, juice removed in a small bowl
- 1 tsp red chilli powder
- ½ tsp black salt
Method
- Wash the sweet potatoes to remove any mud left on them.
- Place them in a pressure cooker, add a cup of water and cook them for 2 whistles.
- Allow the steam to release and then remove and place them on a plate.
- Mix the juice of two limes, the red chilli powder, and the black salt.
- Cut the sweet potatoes pour the mixture over them.
- Alternatively, roast the chopped sweet potato on a warm griddle or place the sweet potatoes in a bowl and mash them gently with the back of a spoon or a fork and then pour the lime juice mixture over them.
