  • 2 cups pre-cooked quinoa (or another grain)
  • 1 can kidney beans, drained
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 1 avocado, peeled and chopped
  • 1 clove garlic, minced
  • Handful fresh herbs (mint, basil, parsley and / or cilantro),
  • Squeeze lime
  • Black pepper
