- 2 cups pre-cooked quinoa (or another grain)
- 1 can kidney beans, drained
- 1 bell pepper, diced
- 1 red onion, chopped
- 1 avocado, peeled and chopped
- 1 clove garlic, minced
- Handful fresh herbs (mint, basil, parsley and / or cilantro),
- Squeeze lime
- Black pepper
- Combine all the ingredients together.
