There is such a great variety of tamales that it was difficult for us to choose one. We selected one of our favorites, made with mushrooms and green sauce. Delicious, elegant, cheap, easy to prepare and perfect for sharing.
Ingredients
- Corn husks
Dough:
- 500 g cornflour
- 4 tbsp of nutritional yeast
- ½ cup vegetable oil
- 1 tbsp salt
- Plain water
Sauce:
- 700g mushrooms, sliced finely
- 500g green tomatoes
- 2 serrano chilis
- Handful coriander, chopped
- Salt and pepper
- ¼ white onion, peeled and roughly chopped
- 2 cloves of garlic
Method
- First, make the dough. Incorporate all the ingredients in a large bowl, adding water until a firm and homogeneous consistency is obtained.
- Now, make the sauce. In a pan, bring the green tomatoes, onion, and garlic to the boil. Immediately, remove from heat and blitz in a blender.
- Add serrano peppers and cilantro, then add salt and pepper to taste. Set aside.
- Sauté the sliced mushrooms in a pan and add the green sauce. Bring to the boil and then remove from the heat.
- Assemble the tamales by opening the softened corn husks and spreading them with the dough.
- Then, spoon in the mushrooms in green sauce, and close the corn husk.
- Put them vertically into a steam pot and steam over a high heat for two hours or until cooked and firm.
