Lemon Cake in a Cup

Who knew you could make a cake in just a few minutes? If you’re craving something sweet but don’t want to spend an hour in the kitchen, this is the recipe for you.


  • ½ lemon, juice and zest
  • 1 tbsp non-dairy milk
  • ½ tbsp lightly flavored oil, like sunflower
  • 4 tbsp all-purpose flour
  • ½ tsp baking soda
  • 3 tbsp agave syrup
  • Berries or cherries, fresh or frozen


  1. Put the lemon juice, lemon zest, non-dairy milk and oil in a large microwave-safe mug, and mix well. Don’t worry if it starts to split.
  2. Add the flour, baking soda and sugar, and stir to combine.
  3. Drop the fruit on top, then microwave for 60 seconds until the top has dried and your cake is spongy. It may need 10 seconds more but be careful not to overcook as the cake will become solid.
