This fresh and zingy pesto remains a firm favorite. It’s delicious, ready in a minute, and is incredibly versatile. Yes, it’s great with pasta, but it’s also ideal on top of a baked sweet potato, alongside roasted vegetables, or as a dip with whatever you fancy.
- 2.5oz noodles
- 2 cloves garlic, peeled
- ½ lemon, juice only
- 2oz walnuts
- 2oz fresh basil leaves
- ¼ cup olive oil
- Salt and pepper to taste
- Cook the noodles as per the packet’s instructions.
- Meanwhile, put the five main pesto ingredients into a blender and blitz.
- When the noodles are cooked, fold the pesto into them, and season to taste.
