Rich and Tasty Marinara

This simple, healthy and versatile sauce is big on flavor and rich in nutrients. We love it on spaghetti, drizzled over roasted vegetables, or as the base for a bean stew (just add beans!).

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, peeled and finely diced
  • 2 cloves garlic, peeled minced
  • 2 x 14oz cans diced tomatoes
  • 2 tbsp sun-dried tomatoes, chopped or sun-dried tomato paste
  • 1 medium sweet potato, peeled and diced
  • ½ cup red lentils, rinsed
  • ½ tsp dried oregano
  • 2 cups vegetable broth
  • Splash red wine (optional)
  • Fresh basil
  • Salt and pepper to taste

Method

  1. Heat the oil in a pan, and cook the onion until softened, about 5 minutes.
  2. Add the garlic, and cook for another minute.
  3. Add the canned tomatoes, sun-dried tomatoes, sweet potato, lentils, and oregano, and stir well. Then add the broth, and the red wine if using.
  4. Cover and bring to the boil, then reduce the heat. Let simmer for 15-20minutes until the lentils are soft, stirring every now and then.
  5. Season to taste, and garnish with the basil leaves. Serve with pasta or whatever you like.
