Stir-fry is an amazing way to use any vegetables you have while also getting a huge range of health-boosting nutrients into your body. Oh, and this one tastes amazing, too. You can add some chopped green chili if you like a little heat.
Ingredients
- 1 tbsp oil
- 1 medium red onion, peeled and finely sliced
- 2cm piece of fresh ginger, peeled and grated
- 1 yellow bell pepper, de-seeded and chopped
- 1 cup sugar snap peas
- 2 cups small broccoli florets
- 1 cup mushroom, sliced
- 2 heads bok choy, roughly chopped
- 4 tbsp soy sauce
- 1 tbsp sesame oil
Method
- Heat the oil in a wok, add the onion and ginger, and cook for 3-4 minutes, stirring.
- Add the other vegetables, splash the soy sauce over them, and cook for another 4-5 minutes. Keep stirring. When the vegetables have softened (but are still nice and crunchy), they’re ready.
- Remove from the heat, and add the sesame oil, stirring again to coat the vegetables.
- Serve with rice or noodles.
