Whether you make this for a picnic, a lunch box, or a satisfying snack, this chickpea ‘tuna’ sandwich is sure to please.
Ingredients
- 2 x 14oz cans chickpeas (garbanzo beans), drained and rinsed
- 2 green onions, finely chopped
- ¼ cup celery, finely chopped
- 2 tbsp fresh dill, chopped (pr 2 tsp dried)
- 2 tbsp capers
- 4 tbsp vegan mayo
- Juice of 1 lemon
- Salt and pepper to taste
- 1 tbsp crushed nori (optional, for extra fishy flavor)
- 8 slices rustic sourdough bread
- Some green leaves
Method
- Roughly mash the chickpeas with a potato masher or the back of a fork, then mix all the other filling ingredients in.
- Serve between bread with some fresh green leaves.
