Chickpea “Tuna” Sandwich

Whether you make this for a picnic, a lunch box, or a satisfying snack, this chickpea ‘tuna’ sandwich is sure to please.


  • 2 x 14oz cans chickpeas (garbanzo beans), drained and rinsed
  • 2 green onions, finely chopped
  • ¼ cup celery, finely chopped
  • 2 tbsp fresh dill, chopped (pr 2 tsp dried)
  • 2 tbsp capers
  • 4 tbsp vegan mayo
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 tbsp crushed nori (optional, for extra fishy flavor)
  • 8 slices rustic sourdough bread
  • Some green leaves


  1. Roughly mash the chickpeas with a potato masher or the back of a fork, then mix all the other filling ingredients in.
  2. Serve between bread with some fresh green leaves.
