Nachos with Guacamole

An ever-popular sharing dish for game night, movie night, or any night (or day).


  • 2 cups refried beans
  • 6 oz tortilla chips
  • 1 cup salsa
  • 1 cup vegan shredded cheese (make sure it is the kind that melts)
  • 2 avocados
  • 1 lime (juice only, or 3 tbsp bottled lime juice)
  • 1 green chili, chopped finely (optional)
  • Handful cilantro
  • Salt to taste
  • Red chili to garnish (optional)


  1. Microwave the refried beans for 30-40 seconds to loosen it
  2. Spread the tortilla chips out on a plate, then spoon on the refried beans.
  3. Add the salsa and sprinkle the cheese over the top.
  4. Microwave for 2-3 minutes until the cheese has melted.
  5. Meanwhile, scoop the flesh from the avocados and roughly mash it. Add the lime, chili, cilantro and salt.
  6. Spoon the avocados on top of the warm nachos and serve with some additional red chili if you like.
