Coconut and Fig Ice Cream

Who doesn’t want ice cream? Here’s one that’s not only delicious but so healthy too.


  • 2 cups of thick coconut milk
  • 100 gms dried figs

For the garnish

  • 2 tbsp pistachio slivers


  1. Rinse the figs under running water to remove any impurities that may be stuck on them.
  2. Place them in a bowl and pour the coconut milk over them.
  3. Cover and place in the fridge for 2 hours for the figs to soak the milk and become soft.
  4. Blend the mixture to a thick paste like consistency.
  5. Freeze for about 6-8 hours.
  6. Scoop out the frozen ice cream and serve garnished with pistachio slivers.
