Who doesn’t want ice cream? Here’s one that’s not only delicious but so healthy too.
Ingredients
- 2 cups of thick coconut milk
- 100 gms dried figs
For the garnish
- 2 tbsp pistachio slivers
Method
- Rinse the figs under running water to remove any impurities that may be stuck on them.
- Place them in a bowl and pour the coconut milk over them.
- Cover and place in the fridge for 2 hours for the figs to soak the milk and become soft.
- Blend the mixture to a thick paste like consistency.
- Freeze for about 6-8 hours.
- Scoop out the frozen ice cream and serve garnished with pistachio slivers.
