Banana Berry Ice Cream

This recipe proves two things: ice cream can be healthy, and you don’t need an ice cream maker to make it. This is a great way to use up ripening bananas.


  • 3 ripe bananas
  • 1 cup blueberries
  • ½ tsp vanilla extract


  1. Peel the bananas, cut them into pieces and freeze in a single layer for at least 2 hours.
  2. When frozen, put them into the blender along with the berries and vanilla extract. Blitz until smooth. You may need to stop to scrape the bananas down.
  3. Eat as is, or put it into a tub and freeze again for 2 hours.
