This recipe proves two things: ice cream can be healthy, and you don’t need an ice cream maker to make it. This is a great way to use up ripening bananas.
- 3 ripe bananas
- 1 cup blueberries
- ½ tsp vanilla extract
- Peel the bananas, cut them into pieces and freeze in a single layer for at least 2 hours.
- When frozen, put them into the blender along with the berries and vanilla extract. Blitz until smooth. You may need to stop to scrape the bananas down.
- Eat as is, or put it into a tub and freeze again for 2 hours.
