Masoor Curry in Coconut Milk

This easy-to-cook masoor curry is delicious and filling. Share it with friends to have a good time together.

Ingredients

  • 1 cup masoor
  • 1 tsp ginger-garlic paste
  • 2 tbsp tomato paste
  • ½ tsp cumin seeds
  • 1 tbsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • 1 teaspoon rock salt
  • 1 tablespoon groundnut oil
  • ¼ cup chopped coriander for garnish

Method

  1. Wash and soak the masoor for 2 hours.
  2. Drain, rinse and cook in 1 cup of water on medium heat for 15-20 minutes or till soft. Do not overcook it.
  3. Add the tomato paste and cook it for another 2 minutes.
  4. Heat the oil in an iron kadai on medium heat and add the cumin seeds. Sauté for about 30 seconds and then add the coriander powder, red chilli powder and garam masala powder. Sauté for another 10 seconds.
  5. Add the ginger garlic paste and sauté for 30 seconds to a minute taking care not to let it burn.
  6. Add a ladle full of the cooked masoor to the kadai and then empty it all into the masoor pot.
  7. Bring it to a boil and turn off the heat.
  8. Add the coconut milk and mix well.
  9. Garnish with coriander leaves and serve with hot rice or rotis.
