Ingredients
Cake batter:
- 1 cup sugar
- A pinch salt
- 1 and ½ cups coconut milk
- ½ cup oil
- 1 cup cornmeal
- 1 cup and 4 tbsp self-raising flour
- 1 tbsp fennel seeds
- 1 tbsp baking powder
- 1 tbsp vinegar
Filling:
- 150g cubed guava paste or grated coconut
Method
- Mix all the batter ingredients together, adding the baking powder and vinegar last.
- Pour the dough into an oiled and cornmeal-dusted pan.
- Spread the guava paste or grated coconut over the dough in the pan.
- Bake at medium heat for about 25-30 minutes.
- Test to see if it is ready by poking the cake with a toothpick. When the toothpick comes out clean, the cake is ready!
