Cornmeal Cake

Ingredients

Cake batter:

  • 1 cup sugar
  • A pinch salt
  • 1 and ½ cups coconut milk
  • ½ cup oil
  • 1 cup cornmeal
  • 1 cup and 4 tbsp self-raising flour
  • 1 tbsp fennel seeds
  • 1 tbsp baking powder
  • 1 tbsp vinegar

Filling:

  • 150g cubed guava paste or grated coconut

Method

  1. Mix all the batter ingredients together, adding the baking powder and vinegar last.
  2. Pour the dough into an oiled and cornmeal-dusted pan.
  3. Spread the guava paste or grated coconut over the dough in the pan.
  4. Bake at medium heat for about 25-30 minutes.
  5. Test to see if it is ready by poking the cake with a toothpick. When the toothpick comes out clean, the cake is ready!
