Vegetable or Pea Pulao

This easy to make flavourful rice dish can be had with a simple mango or lime pickle.

Ingredients

  • 200 gms packet of chopped vegetables or 1 cup green peas
  • 1 cup basmati or other rice
  • 2 tbsp oil
  • ½ tsp cumin seeds
  • 3-inch cinnamon stick
  • 2 cardamoms
  • 2 cloves
  • 1 star anise
  • Salt to taste

Method

  1. Wash the rice and soak it for 30 minutes.
  2. Heat oil in the cooker and add the cinnamon, cardamom, cloves and star anise and sauté for one minute on low heat till all the spices release their flavour.
  3. Drain the rice and add it to the spices. Sauté for another couple of minutes.
  4. Increase the heat to medium and add the vegetables or peas and sauté for another minute.
  5. Add salt and 2 cups of water, give everything a stir and pressure cook for 3 whistles.
  6. Allow the pressure cooker to cool down till there’s no more steam in it.
  7. Serve this delicious rice with pickle, papad and store-bought chutney.
