Steamed Chocolate Mug Cake

Ingredients

  • 1 tbsp sunflower oil
  • 3-4 tbsps coconut or almond milk
  • 2 tbsp jaggery powder or date syrup
  • ¼ tsp vanilla extract
  • 2 tbsp cocoa powder
  • 3 tbsp whole wheat flour
  • ¼ tsp baking powder
  • A pinch of salt
  • 1 tbsp vegan chocolate chips or vegan dark chocolate, chopped

Method

  1. In a deep bottomed dish, boil 2 cups of water.
  2. In a mug, add the oil, plant milk, sweetener, vanilla extract and cocoa powder. Mix well for a few minutes until it is combined. Add the flour, baking powder and salt. Mix well until the flour is incorporated. Add the chocolate chips/chunks and fold it in.
  3. If possible, add a steel trivet and a perforated steel plate at the bottom of the pot with boiling water.
  4. Add the mug on the plate and cover. If placing the mugs directly, ensure the water level does not cross ½ the height of the mug.
  5. Let it steam for 20-25 minutes. Check if the cake is done by inserting a toothpick in the center.
