Ingredients
- 1 tbsp sunflower oil
- 3-4 tbsps coconut or almond milk
- 2 tbsp jaggery powder or date syrup
- ¼ tsp vanilla extract
- 2 tbsp cocoa powder
- 3 tbsp whole wheat flour
- ¼ tsp baking powder
- A pinch of salt
- 1 tbsp vegan chocolate chips or vegan dark chocolate, chopped
Method
- In a deep bottomed dish, boil 2 cups of water.
- In a mug, add the oil, plant milk, sweetener, vanilla extract and cocoa powder. Mix well for a few minutes until it is combined. Add the flour, baking powder and salt. Mix well until the flour is incorporated. Add the chocolate chips/chunks and fold it in.
- If possible, add a steel trivet and a perforated steel plate at the bottom of the pot with boiling water.
- Add the mug on the plate and cover. If placing the mugs directly, ensure the water level does not cross ½ the height of the mug.
- Let it steam for 20-25 minutes. Check if the cake is done by inserting a toothpick in the center.
