The tangy, spicy jackfruit alongside the crispy crunch of the coleslaw is such a winning combination. This is our go-to recipe when we need something fast, feel-good, and filling.
Ingredients
To make the burgers:
- 14oz can jackfruit in water
- 3 tsp BBQ seasoning
- 2 tbsp oil, divided
- A good squeeze of vegan barbecue sauce
- 2 burger buns
To make the slaw:
- 1.5 oz green cabbage, shredded
- 1.5 oz red cabbage, shredded
- 1.5 oz carrots, peeled and shredded
- 1 tbsp chopped dill pickles
- 1 tbsp fresh dill, chopped
- 2 tbsp vegan mayo
Method
- Drain and rinse the canned jackfruit. Cut out the fruit’s tough core and shred the rest with your fingers.
- Mix the jackfruit with the BBQ seasoning and 1 tbsp of the oil, then set it aside for 30 minutes.
- While it is soaking up the flavors, make the slaw by combining all the ingredients in a bowl.
- Heat a skillet and cook the jackfruit in the remaining oil over a medium heat, stirring, for about 5 minutes
- Add the BBQ sauce and cook for another 3-4 minutes. Keep stirring.
- Load the delicious spicy jackfruit into the bun and top it with the slaw.
